healthy_eatingWhen you are eating well and trying to lose weight, you might find your fridge well and truly stocked with fresh produce.
The trouble is that sometimes we buy or prepare too much, and it ends up sitting around growing old in the fridge until it eventually gets tossed out.
Instead of throwing good money in the bin, try some of our tips for using up leftovers or food that is on the verge of going bad.
You might even find that these become some new family favourites!

Leftover rice

Use leftover brown rice to make this delicious Nasi Goreng, which is an Indonesian style fried rice.

Fruit on its way out

Chop up and freeze things like banana or mango.
Anything else that has a high water content such as watermelon or rockmelon just whiz up in the blender or food processor and then freeze into ice cube trays. Use the frozen fruit in your Healthy Mummy Smoothies – it adds a really nice texture.

Leftover pasta

Toss leftover spirals or shells into our Foolproof Spinach and Feta Frittata.

Too many eggs in the fridge

Make some healthy curried egg for sandwiches. Hard boil 6 eggs, then mash up with some salt and pepper, 1 tbsp curry powder, 4 tbsp Greek yoghurt and 2 tbsp low fat mayo.

Limp carrots and sprouting potatoes

Chop the sprouts off the potato. Peel and place the carrot and potato in a tub of very cold water to firm up. Then try and use ASAP in a healthy soup such as our Lamb Shank and Spiced Veggie Soup.

Leftover meat

Chope finely and use any leftover meat in our healthy Rice Paper Rolls.

Uncooked beans, spinach or peas that need to be eaten

Lightly steam them and freeze in zip lock bags. Then just add to your stir fries, soups or casseroles as needed.

Stale bread

Whiz up stale bread in a blender or food processor for home made breadcrumbs. Store in zip lock bags in the freezer and use in recipes like these Crispy Zucchini Rounds.

Odds and ends of cheese

Throw your various cheeses into these delicious Savoury Pumpkin Muffins.

Kid’s Leftover Meals

Don’t throw out a half eaten kid’s portion of Bolognese or stew – reuse it!
Simply mix with an egg and enough tablespoons of flour (amounts will depend on the size of your leftovers) to form a firm mixture which can be shaped into a pattie. Spray a pan with olive oil and grill until golden – serve for lunch the next day.

Sad looking herbs

Use any leftover herbs (mixing and matching is fine!) to make this healthy Homemade Pesto. Then use that as a pasta sauce or as a sauce for some stuffed chicken breasts.

Too many oranges in the fruit bowl

Try using citrus in your cooking. This Orange and Pineapple Chicken is a great way to use up fruit.

Yoghurt on the turn

Freeze right away in ice cube trays and throw them in your Healthy Mummy Smoothies as needed.
