This dish allows you to enjoy the sweetness of Chinese-style cooking without any added sugars.
Use this recipe as a base and then add 2 cups of your favourite veggies to it.
This could be thinly sliced carrot, green beans, snow peas, zucchini, peas or baby corn.
This tasty meal can be enjoyed as is, or serve with some brown rice or wholemeal cous cous.
We also love it in a ‘wrap’ made with lettuce leaves.

  • 500g chicken thighs or breast, chopped into bite size pieces
  • 2 tbsp olive oil or coconut oil
  • Juice of 2 sweet oranges
  • Zest of 1 orange
  • 1 cup of fresh pineapple, cut into chunks
  • 1 tbsp minced ginger
  • 1 tbsp minced garlic
  • 3 tbsp soy sauce
  • 1 tsp hot chilli sauce (optional)
  • 2 cups of stir fry veggies of your choice
  • 3 green shallots, chopped, to serve
  • Heat a small saucepan to medium and add the orange juice, zest, ginger, garlic, soy sauce and chilli sauce. Allow to simmer and thicken.
  • In a separate frying pan set to med/high, heat the oil and then cook the chicken and your chosen veggies until the chicken is golden.
  • Add the pineapple when the chicken is nearly done, so that it can warm through.
  • When the chicken is done, pour the sauce over and then add the chopped shallots before serving.

Serves: 4. Calories per serve: 310 using chicken breast.
