Don’t worry if you don’t have the exact veggies on the list, this recipe is very adaptable to what you have (or what’s on sale). You could try to use a combination of green, orange, red and white veggies.

Seriously how did we not all know about this? You can cook the pasta for your Spag Bol in the same pot as the bolognese. This truly is a one pot wonder, and is packed with hidden veggies. There’s plenty of it too so use the leftovers for making nachos or as a topping for a jacket potato another night.

Oriental Salmon & Broccoli Traybake
Dinner done in 30 minutes? Sounds good. With only a few fresh ingredients you can have this meal baking in the oven in no time. If you haven’t tried oven roasted broccoli before, you’re in for a treat.

Prawn and Pineapple Curry
Prawns are much faster to cook than beef or chicken, so when time is of the essence they are a great option. This curry will warm you up on a cool night, and the pineapple adds a hint of freshness. Reduce or omit the chilli depending on your family’s tastes.
