Sticking to your post pregnancy weight loss plan gets much better with this tasty and healthy Oriental Salmon and Broccoli Traybake! Not only is it amazingly quick and easy to cook, your body will also benefit from the immense healthy elements of this zesty dish.
Broccoli might be a very common vegetable but its nutritional values are certainly very noteworthy. These little greenies are known to helps us prevent heart disease and lower the risk of cancer. But it’s also a great source of dietary fibre which would immensely help with our post pregnancy diet plan.
Atlantic Salmon are usually bred in the clear waters of Tasmania and they’re packed with heaps of essential nutrients that can help you prevent illnesses and diseases whilst encouraging overall well-being.
Of course, salmon is also a great healthy diet superfood that contains lean protein, anti-oxidants, essential omega-3 fatty acid, vitamin B, calcium, and much more.
Ingredients (Serves 4):
- 4 salmon fillets, skin on
- 1 head broccoli, cleaned and cut into florets
- Spring onions sliced
- Half cup lemon juice
- Half a lemon cut into two halves
- 2 tbsp soy sauce low salt
Method:
- Pre-heat oven. 160 degrees for gas oven and 180 degrees for fan forced oven.
- Place all 4 salmon fillets in a large roasting tray. Leave some space in between each fillet.
- Place the broccoli florets around the fillets.
- Pour the lemon juice over all the ingredients and add in the lemon slices.
- Add in a few sliced spring onions onto the fish fillets and drizzle with a little bit of olive oil.
- Put the tray into the oven and leave it to cook for 14 minutes.
- Remove tray and sprinkle soy sauce on all the ingredients.
- Put the tray back into the oven and let it bake for another 4 minutes.
- Sprinkle with remaining spring onions and serve.
