Here’s a quick and easy meal idea that can be thrown on the BBQ or grill and ready in no time.
Using herbs, spices and citrus is a great way to pack in loads of flavour without the fat, sugar and salt in many store bought marinades.
Why not serve with:
- wholemeal pita bread
- healthy coleslaw
- grilled corn on the cob
- home made chips
Ingredients:
- 500g lean beef, diced
- Juice and zest of 1 lime
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tsp minced ginger
- 1 tsp fresh minced chilli
- 2 tbsp water
- 1 small onion, finely diced
- 2 sprigs of rosemary
- 8 bamboo skewers, soaked in water for an hour
- Olive oil spray
- Salt and pepper
Method:
- Place the lime, oil, soy, ginger, chilli, water, onion and rosemary in a shallow dish and mix well.
- Toss in the beef and stir until well covered.
- Set aside to marinate for 30 minutes.
- Thread the beef onto the skewers and season to taste with salt and pepper.
- Heat your grill or BBQ to med/high and spray with olive oil.
- Cook for 3-4 minutes on each side, or until cooked to your liking.
- Discard leftover marinade.
Serves: 4. Calories per serve: 325.
