A BBQ chook is the ultimate in super quick, healthy ‘takeaway’ food. We’ve all been faced with the temptation, after a long day, to pick up the phone and order in dinner.
While there are a range of healthier takeaway options available these days (click HERE to check out our top picks), keeping ordering in a sometimes occasion is generally the best option when it comes to weight loss.
So what’s a busy mum to do when it’s 5pm and the family is hungry? Grab a BBQ chicken! BBQ chicken, ideally with the skin removed, provides a great, protein rich base for a range of yummy meals.
Chicken breast is a weight loss staple food, while kids (and husbands) usually love the legs and wings. A family sized chook can usually feed a hungry family of four cheaply and easily. If you have a smaller family, you’ll be left with some great leftovers which can be used for lunches the next day.
Here are our top suggestions for an easy meal that’s both delicious and nutritious.
- Serve it with salad – Pull apart your chicken and serve it with a bunch of delicious sides. Salads, homemade coleslaw, jacket potatoes, corn on the cob, the options are endless. Add some crusty wholemeal rolls and you’ve got dinner sorted.
- Add it to pasta – Chicken makes a great addition to your usual pasta dish. Simply shred chicken breast and add it to your sauce, towards the end of cooking. We love it with basic tomato pasta sauce or even in a healthy pasta bake.
- Put it in a burger – There’s nothing like a healthy chicken burger? Toast up some wholemeal bread rolls. When the rolls are ready, add lettuce or spinach leaves, low fat cheese slices, sliced tomato and your favourite, low salt sauce. Top with shredded chicken and enjoy.
- Go stir-crazy – BBQ chicken makes a great ingredient for a stir fry. Simply stir fry your veggies, add your chosen sauce and toss in the chicken at the last minute. Make sure everything is well combined and serve with rice or noodles.
- Make healthy pizza – All you need for healthy pizza are some wholemeal flatbreads or pizza bases, tomato pasta, diced tomatoes and your BBQ chicken. If you have any leftover veggies, you could always add them to the mix as well. Roast pumpkin, crisp rocket and lightly cooked mushrooms all taste great on a pizza.
