If you and you family enjoy healthy eating foods such as coconut yoghurt, you’ll be pleased to know that you can easily make your own at home to enjoy while you lose pregnancy weight.
Once it’s ready:
- Use this yoghurt as breakfast with some chopped banana and a sprinkling of LSA
- Dollop it on top of some Blueberry Pancakes (recipe here)
- Add some to your Healthy Mummy Smoothie
- Serve it up with a scoop of oats, a chopped nectarine and a handful of crushed walnuts
- Use it as part of a salad dressing (recipe here)
- Marinate some chicken in it with some freshly chopped garlic and ginger
- Add some chopped mint and cucumber, then serve with it spicy food
- Use it to make some homemade ice blocks by mixing with pureed berries and then freezing in ice block moulds overnight
Ingredients:
- 400ml tin of coconut cream
- 2 tsp probiotic powder (such as Inner Health Plus)
Method:
- Sterilise a jar with a lid (you can wash it in the dishwasher and then pull it out when you are ready to use it).
- Shake the tin of coconut cream and empty it into the jar.
- Add in the probiotic powder and stir well.
- Place the lid on and put the jar in your oven with the oven light on. This gives it an even temperature that isn’t too hot.
- Leave the jar in there for 8 hours before placing in the fridge overnight (or 8 hours) to set.
- Serves: 6. Calories per serve: 110.
Optional mix ins after it’s ready:
- Add a squirt of honey or rice malt syrup if you like it a bit sweeter
- Add a teaspoon of vanilla bean paste for a vanilla-coconut treat.
- Add a dollop of Raspberry Chia Jam (recipe here – this is a MUST TRY!)
- Scoop in a passionfruit or some chopped mango
Note: if you are after a dairy free alternative, you can find some probiotics that are dairy free.
