These fajitas pack in a load of flavour as well as some quality protein and veggies too.
The smokiness of the paprika adds some lovely depth to the beef, while the chilli manages to spice things up nicely. Feel free to omit the chilli if cooking for little ones.
These fajitas also taste great with any combination of the below:
- Chunks of fresh avocado
- Corn on the cob with chilli and lime
- Mango salsa
- Add some peppery rocket to the wraps
Ingredients:
- 600g lean rump steak, sliced into chunks or strips
- 2 tsp smoked paprika
- 1 tsp minced chilli
- 1 tsp minced garlic
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 red onion, chopped into chunks
- 1 red or green capsicum, sliced into chunks
- Mint leaves, to serve
- 4 wholemeal tortillas
- 1 lime, cut into 8 wedges
Method:
- Marinate the beef in a bowl for 30 minutes with the paprika, chilli, garlic and olive oil.
- Heat your frying pan to med/high and cook the beef, in batches, until golden brown all over. Season to taste and set aside.
- Toss in the onion and capsicum and cook for 3 minutes until tender.
- Serve the beef and veggies onto the tortillas with some lime wedges and a sprinkling of mint leaves.
