Often it can be a struggle to get our kids to eat the nutritious veggies that they need- even the best of eaters go through their “I don’t like that” phase.
Today Motivating Mum of 3 Beth Henke who has been following the Lose Baby Weight healthy eating plans has sent in another “Hidden Veggie” recipe for us all to enjoy.


  • 280gm chicken mince
  • 2 cups cooked Brown Rice, cooled (you can use basmati, it will change the calories to slightly less)
  • 2 Eggs lightly beaten
  • 100gm Red Capsicum- chopped into small pieces
  • ½  Cup Frozen Peas
  • ½  Cup Frozen Corn
  • 1/2 bunch chopped fresh chives
  • 100gm reduced fat Cheddar Cheese
  • 40ml Sweet Chilli Sauce
  • ¾  pkt of Spring Vegetable Soup Mix


  • Preheat oven to 200 degrees(180 fan forced)
  •  Line two baking trays with baking paper, You can use muffin tin trays either sprayed with non stick spray or lined with cupcake wrappers.
  •  In a bowl combine all ingredients and mix well.
  •  Place 1/3 cup mix on the tray or in tins until all the mixture is gone
  • Bake for 25-30mins
