Today I’m sharing with you my delicious Choc Mint Overnight Oats that I make when I’m craving something sweet in the morning or an afternoon snack (I just make less). There is so much you can do with the Healthy Mummy Smoothie powder and I love the extra boost of natural nutrients I can get from it.
Ingredients
- 1 banana sliced
- 1/4 cup of rolled oats
- 6 mint leaves finely chopped
- 1 tablespoon Chocolate Healthy Mummy Smoothie Mix
- 1.5 tablespoons of cocoa powder or cacao
- 3 tablespoons of low fat greek yoghurt or natural fat free yoghurt
- 1/4 cup of almond milk or low fat milk

Alternative to Choc Mint Sauce (without Healthy Mummy Smoothie Mix)
- 3 tablespoons of low fat greek yoghurt or natural fat free yoghurt
- 1.5 tablespoons of cocoa powder of cacao
- 1 tablespoons of honey or 1 tsp of coconut sugar
- 6 mint leaves finely chopped
- 1/4 cup almond milk or low fat milk
Method
- In a bowl make the choc mint sauce by mixing the yoghurt, cocoa, Healthy Mummy Smoothie Mix, mint leaves and milk until well combined or use alternative choc mint sauce if you don’t have the Healthy Mummy Smoothie Powder.
- In a jar, container or bowl place half of the oats on the bottom followed by half of the sliced banana and 3 tablespoons of the mint sauce then repeat again with the next layer, 2 layers all up.
- Put lid on or glad wrap and place in the fridge for a couple of hours or overnight or you can eat straight away. Up to you.
Tips
- Keep leftover choc mint sauce in the fridge or freeze in icecubes for later or to put into Healthy Mummy Smoothies
- You can add strawberries, blueberries, any fruit, chia seeds for extra energy or to boost your calories.
- For an afternoon snack just make 1 layer.
