Lea Faes has sent in this impressive looking recipe for a whipped coconut cream and mango crepe cake – yes please!

  • Crepes:
  • 3 eggs
  • Pinch of salt
  • 1 tsp of vanilla essence
  • 1 1/2 cups skim milk
  • 3/4 cup wholemeal plain flour
  • Whipped Coconut Cream:
  • 2 cans chilled coconut cream
  • 1 1/2 tbsp honey
  • 1 tsp of vanilla essence
  • 2 mangoes – sliced thinly

  • Both the crepes and the whipped coconut cream can be made the day prior if desired.
  • For the crepes, whisk eggs and add other ingredients into a bowl and whisk until combined. Set mixture aside for 5 minutes.
  • Heat a medium sized pan on medium heat, spray with cooking spray and pour 1/4 cup of mixture into pan.  Swirl mixture around pan to create a thin even crepe – cook until golden and then flip and cook the other side.
  • Repeat with rest of mixture – you should get around 12 crepes.
  • For the whipped coconut cream, scoop out the cream from the top of the cans and put it into a bowl. Add honey and vanilla essence and beat using electric beaters until it holds stiff peaks.
  • Putting the cake together: do this the day of serving. Layer one crepe, add a layer of whipped coconut cream and sliced mangoes. Repeat until all crepes are used up.
  • Serves: 20
  • Calories: 137 per serve
