Apples are a great food to include in your diet for your health and your weight loss. And as apples are under 55 calories they are the ideal snack when you are following a weight loss plan.  And recently we posted up three delicious weight loss recipes with apples and as that post was so popular we thought we would post up a couple more which we hope you enjoy!

Winter-Spiced Mincemeat Apples

Ingredients:

  • 2 large apples
  • 75g marzipan
  • 8 tbsp. spiced mincemeat made with cranberries and orange, or with raisins and sultanas – use whichever mincemeat you have to hand
  • Zest and juice of one unwaxed lemon

Method of Preparation:

  1. Slice the apples in half and remove the core. Cut the marzipan into cubes.
  2. Stand the apples flat side up in a microwave dish. Combine the marzipan, mincemeat and lemon zest in a bowl. Top the apples with the mincemeat mixture.
  3. Drizzle with the lemon juice, cover the dish with cling wrap, pierce with a fork a few times and then microwave the apples on high for 4-5 minutes until tender.
  4. Leave to stand for 5-10 minutes before serving.

Recipe serves 4. Calories per serving: 200. If you don’t have any mincemeat in, combine 6 tbsp. of mixed dried fruit with 2 tbsp. fruit juice and ½ tsp. each cinnamon and ginger in a small saucepan over a low heat for 10 minutes.

Oaty Baked Apples

Ingredients:

  • 4 large apples
  • 2 tbsp. oats
  • 1 tbsp. runny honey
  • 2 tbsp. sultanas
  • 2 tbsp. cranberry juice
  • Pinch of ground cinnamon

Method of Preparation:

  1. Soak the sultanas in a bowl with the cranberry juice.
  2. Heat the oven to 160C. Core the apples using an apple corer, then slice around the centre of each apple into the skin using a sharp knife.
  3. Put the apples into a baking dish. Divide the sultanas between the apple cavities.
  4. Drizzle each apple with the honey. Toss the oats with cinnamon and pat onto the top of each apple.
  5. Bake for 30-45 minutes until soft and tender and golden.

Recipe serves 4. Calories per serving: 106. You can always use dried cranberries instead of sultanas if you prefer.
