weight_loss_recipesCinnamon and Berry Roasted Apples

Ingredients:

  • 4 medium apples
  • 4 tbsp. runny honey
  • 250g mixed berries
  • Zest and juice of one orange
  • ½ tsp. ground cinnamon, or to taste

Method of Preparation:

  1. Preheat the oven to 160C. Core the apples using an apple corer, leaving them intact but with a hole in the middle. Slice into the skin around the middle of each apple.
  2. Put the apples into a baking dish. Combine the honey, orange zest and cinnamon. Drizzle into the cavity of each apple.
  3. Pour the orange juice into the baking dish. Roast the apples for 40 minutes. Add the berries, spooning them onto the top of the apples and around the sides of the apples. Roast for another 10 minutes, then spoon the juices all over the apples to serve.

Recipe serves 4. Calories per serving: 129. Use frozen berries or fresh berries, whatever you have to hand is fine.

weight_loss_recipesMustard-Maple Pork & Apples

Ingredients:

  • 600g lean pork fillet or pork steaks
  • 2 apples
  • 3 tbsp. apple juice
  • 2 tbsp. maple syrup
  • 2 tbsp. wholegrain mustard
  • 1 tbsp. white wine vinegar
  • 1 tbsp. olive oil
  • Salt and pepper

Method of Preparation:

  1. Core the apples and slice them into eighths. Slice the pork fillet into slices or cubes.
  2. Heat the oil in a frying pan. Add the pork, season well and fry for 2-3 minutes on either side until golden brown. Remove from the pan and set to one side on a plate.
  3. Add the apples and cook for 4-5 minutes until starting to soften.
  4. Add the maple syrup, apple juice and vinegar. Bring the liquid to a boil, add the pork back into the pan, stir in the mustard and simmer until the pork is cooked through and the apples tender. Season to taste.

Recipe serves 4. Calories per serving: 303. Omit the mustard if you want to and just add some herbs, such as sage or parsley.

Roast Carrot, Parsnip & Apple

Ingredients:

  • 8 medium carrots
  • 6 medium parsnips
  • 1 large red onion
  • 3 apples
  • Salt and pepper
  • 1 tbsp. olive oil

Method of Preparation:

  1. Peel the onion and chop into wedges.
  2. Peel the carrots and slice into batons or chunks and core and quarter the apples.
  3. Preheat the oven to 160C. Toss the carrots and onion with the oil in a non-stick roasting tin. Season with salt and pepper.
  4. Roast for 30 minutes and then add the apples. Toss to combine and cook for another 40-50 minutes until tender and golden. Season with extra salt and pepper before serving.

Recipe serves 4. Calories per serving: 129. This makes a wonderful side dish, or if you want to, put all of the veggies into a blender with chicken stock once they’ve been roasted and blitz to make a well flavoured soup.
