healthy_eatingIt’s Father’s Day this weekend and what better way to show how much you care than by serving up a delicious breakfast?
There’s no reason why the whole family can’t enjoy this healthy French Toast.
Instead of the usual suspects (like maple syrup or icing sugar), we recommend loading up on some fresh fruits for the topping instead.
Here are some great ideas for French Toast toppings:

  • Banana, a drizzle of honey and extra cinnamon
  • Warmed up raspberries and their juice
  • Fresh blueberries and chopped kiwi fruit
  • Apple and rhubarb compote (see our recipe here)

All topped with a healthy dollop of natural or Greek yoghurt. Yum!
And while there is some butter in the recipe, when you divide it among the two serves it comes to a very small amount per person. Enjoy!

  • 2 slices of good quality wholegrain bread or sourdough
  • 1 egg
  • 2 tbsp skim milk
  • 1 tsp cinnamon
  • 1 tbsp butter
  • Olive oil spray
  • Heat a large frying pan over medium heat.
  • Place the eggs, milk and cinnamon in a bowl and whisk to combine.
  • Spray the pan with a small spritz of olive oil, and then melt the butter in the pan
  • Dip the slices of bread, one at a time, into the egg mixture. Turn over so that each piece is fully coated.
  • When the butter has melted, add the slices of eggy bread.
  • Cook until golden brown on one side before turning over.
  • Serve with your favourite fruits and yoghurt toppings.

Serves: 2. Calories per serve: (before adding your chosen toppings) 190.
