Today I am sharing my super simple and really tasty recipe for a sweet potato hash with egg.
Sweet Potatoes are a better choice when looking to lose pregnancy weight because sweet potatoes are packed with beta carotene and are a low GI food, meaning they provide longer lasting, slow-burning fuel for your body (which is better for your blood sugar and energy levels).
This recipe is really versatile, and makes a great hearty breakfast when you know you’ll need some extra fuel for the day ahead. Add any extra herbs or spices to your taste, yum!
Ingredients:
- 1 Small Sweet Potato (or half a medium) Grated finely
- 1/4 Cup Red Capsicum chopped finely
- 1 Egg (you could use 2 to up your protein intake)
- 1 Tbsp Olive Oil
- 1/4 Tsp Ground Cumin
- 1/4 Tsp Ground Ginger
- 1 Tbsp Fresh Basil finely chopped
Method:
- Heat oil in a medium sized fry pan on a medium heat
- Add in the sweet potato, capsicum and spices and cook stirring for 2-3 mins
- Once they have started to soften turn down the heat and cover with a lid (I used one that goes on my saucepan) for 1-2 mins
- Take lid off and crack your egg over the sweet potato and pop the lid back on and cook until your egg is cooked ( 2-5 mins)
- Once egg is cooked take lid off, sprinkle with basil, transfer to a plate and enjoy
Serves 1, calories per serve 200.
