Trying to cut out sugar when making cakes then you will love this nutritious Banana and Date Bread that is still sweet and the kids will enjoy as my kids demolished it!

Ingredients

  • 12 Mejool Dates
  • 1/4 cup water
  • 1 cup LSA
  • 1 cup Plain Wholemeal Flour (can use Self Raising Wholemeal flour but leave out baking powder and salt)
  • 1tsp Baking Powder
  • pinch of salt
  • 2 ripe bananas
  • 1/2 cup desiccated coconut
  • 1/2cup almond and coconut milk (can use any other milk)
  • 2tbsp Nuttelex lite butter (can use any butter instead)

Method

  • Preheat fan forced oven to 180 degrees.
  • Place 12 dates with pits removed in a saucepan with a 1/4cup of water and simmer until mushy and water has evaporated and let cool.
  • Add dry ingredients to another bowl and mix until well combined.
  • Place bananas and butter with the dates and mix until well combined.
  • Add banana and date mixture with the milk to the dry ingredients and mix well.
  • If mixture seems dry add more milk.
  • Grease a loaf tray and line with baking paper and bake for 45-50mins until skewer comes out clean.
  • Chill and cut into 12 slices.
