Lisa used to loved baking up “naughty” cakes and treats for herself and her family but since starting The Healthy Mummy Smoothies and products she has lost almost 10kg and has found a new love of cooking and inventing HEALTHY TREATS.
Usually Lisa has a Healthy Mummy Smoothie for breakfast but wanting to try something new she turned her smoothie into these amazing waffles.
INGREDIENTS
- 1/4 cup low fat milk
- 2 Tbsp rolled oats
- 2 Tbsp vanilla Healthy Mummy Smoothie mix.
- 1 Tbsp Low Fat Greek yoghurt
- 1 tsp baking powder
- 2 tbsp wholemeal flour
- 1 tsp vanilla essence
- 1 pinch nutmeg
- 1 egg
METHOD
- Place all ingredients into a blender, blend until smooth.
- Pour mixture into a pre-heated waffle maker.
- Cook until golden.
- Add your favourite toppings. I love mine topped with 1 Tbsp of low fat yoghurt, 1/4 cup mixed berries, 1/2 Tbsp LSA and a drizzle of honey. Come up with your own yummy variations, add cacao for choc waffles with hazelnut spread and banana – yum!
Makes 2 waffles – total calories for 2 waffles 350 calories plus toppings (1 waffle 175 calories).
