What a classic Aussie treat – the lamington. Well now you can prepare these without feeling guilty. This recipe was prepared by Leonie Voskamp, one of the mums using our healthy eating diet plans.
Using another Lose Baby Weight recipe – the Chia Berry Jam, these delicious cupcakes are something special you can make for the family or to keep on hand when you need a little something to go with a cup of herbal tea.
Ingredients
Cupcake
- 125g light butter, softened (you could replace half the butter with mashed avocado to keep calories down if you like)
- 1/2 cup coconut sugar
- 1 tsp vanilla extract
- 2 eggs
- 1 cup wholemeal self raising flour
- 1/3 cup cacao powder
- 1/4 tsp bicarb soda
- 1/3 cup desiccated or shredded coconut
- 3/4 cup light milk
- 1/4 cup Chia Berry Jam
Icing
- 2 tbsp honey
- 2 tbsp coconut oil
- 2 tbsp cacao powder
- Extra desiccated or shredded coconut, to top
Method
- Preheat oven to 180C. Line a 12 hole muffin tray with paper or silicone cases.
- Beat butter, sugar and vanilla together with a hand mixer until light and creamy. Add eggs, one at a time, beating well after each addition.
- Add flour, cacao powder and bicarb soda to the butter mixture. Beat in with mixer until just combined. Add coconut and milk and beat in.
- Spoon 1 tbsp batter into cases, add 1 tsp of jam into the centre of each cupcake and then top with more batter, covering jam until case is two thirds full.
- Bake for 20-25 minutes or until cooked through. Transfer to a wire rack to cool.
- To make the icing, mix ingredients until well combined. Place in fridge to harden slightly before spreading over cupcakes. Sprinkle with extra coconut.
- Serves 12, Approx 250 calories per cupcake.
