Here is a delicious recipe submitted to our Healthy Mummy Community, where members can send in their own super creative, healthy and YUMMY recipes that can be enjoyed while following a healthy eating plan.
A big thank you to Megan Wells who has sent in this delectable Healthy Slow cooked Beef Cheeks With Cauliflower Mash recipe.
Ingredients
- 400 grams beef cheeks
- 2 cups salt reduced beef stock
- 2 cloves garlic
- ¼ medium red chilli
- 2 tsp tomato paste
- 2 tsp red wine
- Approx. 12 button mushrooms
- 2 shallot stalks
- ½ head cauliflower
Method
- Crush garlic, chop chilli and cut mushrooms into quarters
- Mix beef stock, red wine, tomato paste, crushed garlic and chilli all together in your slow cooker
- Add beef cheeks and throw quartered mushrooms on top
- Close lid and cook on high for 6 hours
- Once ready switch to keep warm mode
- Boil cauliflower either over medium heat in a saucepan of water until cauliflower is soft or in microwave in container of water for 10 minutes or until cauliflower is soft
- Drain cauliflower then mash together with a fork or potato masher
- Chop shallots
- Place cauliflower on plate, add one beef cheek (approx 200 grams) to the top of the bed of mashed cauliflower and pour sauce and mushrooms on top, repeat for 2ndplate then top both with fresh chopped shallots
- ENJOY!
