A great little muffin recipe sent in by one of the mums following our healthy eating diet plans, Aislynn Ireland. This recipe uses some of the Healthy Mummy Smoothie powder for extra protein. These are sugar free so an ideal snack to enjoy when following a healthy eating diet plan.


  • 2 tbsp Vanilla Healthy Mummy Smoothie Mix
  • 1.5 cup Oats
  • 3/4 cup wholemeal self raising flour
  • 1/2 cup skim milk (or milk of choice)
  • 2 tsp cinnamon
  • 1 egg whisked
  • 1 mashed ripe banana
  • 2 tbsp Apple purée (unsweetened or make your own)
  • 2 tbsp coconut oil
  • 1 tbsp rice malt syrup
  • 50-60g chopped dried dates


  • Preheat oven to 160C fan forced.
  • In a bowl put oats and milk and leave to soak until ready to use.
  • In a separate large bowl place flour, cinnamon, Healthy Mummy Smoothie powder, dates and lightly stir to combine.
  • In another bowl add egg, banana, apple purée, coconut oil, rice malt syrup and combine.
  • Now, add the oats and milk mixture to the wet ingredients bowl and combine.
  • Finally, fold wet ingredients bowl into the dry ingredients bowl.
  • Using a lined 24 hole mini muffin tin, divide the mixture and bake for approx. 10 – 12 mins but check at 8 mins in case your oven runs hot.
  • Approximately 70 calories per mini muffin.
  • You could also add 1/4 cup dark chocolate chips for a sweeter treat but just increase calories accordingly.
