Lose Baby Weight-Iced apple loaf



  • 1 Tbsp honey
  • 1 Tbsp boiling water
  • 1 Tbsp cornflower
  • (for icing) 3 tsp Light cream cheese
  • (for icing) 1/2 tsp vanilla


  • 1 cup natural greek yoghurt
  • 1 cup Wolemeal Self Raising Flour
  • 2 tsp Coconut sugar
  • 1 tsp Cinnamon
  • 1 tsp vanilla


  • 1 Apple (peeled and diced into medium chunks)
  • 1 tsp coconut sugar
  • 1 cup water


  • Stew the apple in a saucepan with the water and sugar until soft but still holding shape.
  • Drain and set aside.
  • Make the glaze mixture by melting the honey in the boiling water. Mix in the cornflower.
  • Pour about 1-2 Tbsp of the mixture into the apples and microwave for about 15-20 sec to activate the cornflower the thicken the apples into a custard. Set aside the apple mixture and Set aside the remaining glaze.
  • Mix all the loaf ingredients in a large bowl (it will be sticky). Transfer onto a floured surface and kneed until a dough forms (add more flour if needed). Press or roll out onto a floured baking sheet into a rectangle.
  • Place the apple mixture lengthways down the centre. Then cut lines widthways from the outside to the mixture in centre equally along both sides. Fold the strips alternately over the mixture to form the braid. (This can be sticky so I used a floured spatula to help me) and roll up the ends the enclose the apple mixture.
  • Brush some of the glaze over the top and bake for 15 min in a 180° oven. (or until golden)
  • The icing uses the remaining glaze (probably less than 1 Tbsp, make more if you need to). Microwave the glaze for 10 sec then mix in the vanilla and cream cheese. Drizzle this on top once the loaf is out of the oven.

Options: Try using mixed berries instead of apple.
Options: Try making a caramel glaze by mixing in 1 Tbsp of 100% smooth peanut butter and a tsp of vanilla to the honey glaze.
