Mum of 3 Beth Henke has been following the Lose Baby Weight healthy eating plans since June this year and has lost 15kg. Today she has sent in her healthy recipe that she created to help her kids enjoy their healthy dinner a little more.
You could use any veggies that you have in your fridge or freezer.
Ingredients
- 500g Chicken Mince
- 300g cooked Vermicelli Noodles
- 1 Carrot grated (100gms)
- 1 Zucchini grated and excess moisture removed (200gms)
- 1/2 cup frozen/tinned Corn Kernals
- 1-2 chopped Spring Onions (20gms)
- 2 Eggs
- 2 tbps Soy Sauce
- 2 tbps Sweet Chilli
- 1 tsp Chicken Stock Powder
Method
- Preheat oven to 220°(200° fan forced) and line two large trays with baking paper
- Place noodles into a large bowl and chop roughly with scissors.
- Add all other ingredients and mix with your hands until well combined
- Roll into balls (approx 1 tablespoon and a bit) and place on lined tray evenly spaced out
- Bake for 25-30 mins
- Balls should be firm when cooked and golden on top
- Serve with a crunchy salad, in a wrap or even with some sweet potato chips
