Super quick and easy, pulling together this salad is simple, and guarantees you won’t be stuck in the kitchen for hours on end at the end of a busy day. If you’ve never tried haloumi before, this is the perfect recipe, as it really showcases the flavour of this tantalising and tangy cheese. Originating from Cyprus, it’s actually a cheese that you cook gently (either under the grill or in a pan), and it doesn’t melt like other cheeses when hot. Instead, it gets a bit firmer, almost like a shortcrust, and takes on a fantastic salty, savoury flavour. It’s a versatile ingredient that delivers a combination of protein, calcium and vitamin A, and the lentils in this recipe are also a fantastic source of protein and magnesium.
