If you’re looking for something light to whip up in the days after all that festive fare, look no further than a fresh, tangy salad.
While indulging in a few treats over Christmas is all part of the fun, your poor old tummy can usually use a break by the time the day after Boxing Day rolls around.
Days of eating, drinking and generally being merry often mean that your usual eating habits have been slightly (or dramatically) altered, throwing your system off kilter as it struggles to adjust to unfamiliar foods and portion sizes.
Bloating, constipation, diarrhea and heartburn are all common side effects of over indulgence, or a shift from your usual diet.
Including a couple of light meals in the days after Christmas gives your overstretched stomach and liver a chance to catch up with themselves and get back to working efficiently.
Ingredients that are high in fibre will help relieve stomach discomfort, while plenty of ruffage in the form of rocket and lettuce can help promote healthy digestion.
This salad also utilises chickpeas for a hit of protein. After all, you’ll need all the energy you can get for the post Christmas sales!
Ingredients
- 2 cups of mesclun greens, rinsed.
- 1 cup of rocket leaves, rinsed
- 1 cup cherry tomatoes, diced
- 2 tbsp lemon juice
- 5 tbsp olive oil
- 1/2 cucumber, diced
- 400g can of chickpeas, drained and rinsed
- 150g haloumi, cut into slices
- 2 wholemeal pita breads
- Olive oil spray
Directions
- Preheat a grill to medium and place pita breads under the heat to crisp up.
- Place the lettuce, rocket, cucumber, tomatoes and chickpeas in a large bowl and toss to combine.
- Spray a frypan with olive oil spray and heat over medium heat.
- Add the haloumi and cook gently until golden then remove from heat and scatter over salad.
- Remove pita bread from under the grill and when cool to touch, tear into chunk and scatter over salad.
- In a measuring cup or small jug, whisk together the olive oil and lemon juice.
- Drizzle dressing over salad and serve.
