I have fallen in love with the simplicity and deliciousness of this super healthy sweet snack/ dessert dish that is ideal for any healthy eating plan or if you are trying to lose your baby weight.
Babies from1 year and toddlers will also love them, especially if you make mini bite size ones just for them.
You will need-
- Any raw nuts and dried fruits- a mixture or one kind, it doesn’t matter –I suggest a pack of fruit and nut mix
- Peanut Butter
- Raw Honey
- Desiccated Coconut
Pulse 2 cups of mixed nuts and fruit in your blender or food processor until thoroughly chopped and combined. It’s easier to do in a few batches than one large batch.
Pour into a bowl. Add two tablespoons of peanut butter, and one of honey. Mix with a butter knife until well combined. It should be easy to form a ball, and not sticky. If it is sticky add a little desiccated coconut.
Fill a small plate with desiccated coconut. Roll small balls and roll in coconut. Refrigerating for a few hours is best before eating, if you can get them in there before they are seen by your family!
- It’s fun to adjust this recipe to suit your own tastes!
- Try using tahini instead of peanut butter and honey
- Roll them in sesame seeds instead of coconut
- Add orange zest, cinnamon and dark choc chips for a healthy Christmassy flavour
