Ingredients 

  • 2 tbsp cacao
  • 1 1/2 tbsp coconut oil
  • 3/4 small royal gala Apple
  • 1 whole egg
  • 1 egg white
  • 2 tbsp honey
  • 1/4 tsp vanilla extract
  • 1 1/2 tsp cinnamon
  • 1/4 square 70% dark chocolate per mini muffin
  • Fine desiccated coconut to decorate (approx ¼ tsp per mini muffin)

Method

  • Preheat oven to 160C and grease a mini muffin tray with cooking oil spray
  • Peel skin from apple, discard core
  • Purée 3/4 apple in blender or food processor
  • Melt coconut oil in microwave 20-30 seconds (if solid)
  • Add puréed apple, cacao, coconut oil, whole egg, egg white, honey, vanilla extract, & cinnamon to mixing bowl
  • Mix until no clumps of cacao present
  • Add mixture evenly into mini muffin tray
  • Place muffins in oven till mostly cooked (10-15 mins depending on oven)
  • Add 1/4 square 70% dark chocolate to the middle of each muffin
  • Put back in oven for remaining 5-10 mins (or till desired consistency)
  • Take out of oven and sprinkle a pinch of desiccated coconut on each muffin
  • Serve warm with a cold glass of milk or 1 tbsp Greek yogurt + 1 large strawberry
  • ENJOY! 🙂
