Free from butter and white sugar these Date Scones are the perfect afternoon tea.
Serve with our our Chia Berry Jam for especially delicious results!
Ingredients
- 2 cup SR wholemeal flour
- 1 tsp baking powder
- 2 tsp coconut sugar
- 40g coconut oil (softened not liquid)
- 1/2 cup chopped dates
- 1 egg
- 150 ml milk
Method
- Preheat oven to 180*c, grease and line and oven tray.
- Sift flour, baking powder and sugar into a mixing bowl.
- Add coconut oil in small dollops, rub through flour mixture until it resembles fine bread crumbs.
- Add dates and mix.
- Make a well in centre, add lightly beat egg and milk.
- Mix (use a bread and butter knife to cut through the mix it will help keep the air) until just incorporated and then turn out onto a floured surface.
- Knead until just smooth (no longer otherwise the scones will lose fluffiness).
- Roll out to 2cm and cut out scones (you can use a round cookie cutter or just cut them using a knife).
- Brush scones with milk
- Place in oven and cook for 10-15 mins.
- Allow to cool and enjoy with your favourite toppings!
Makes 10 and only 165 calories per scone.
