Today we want to give you one of the yummy healthy eating recipes from the 28 Day Diet & Exercise Plan.

Beef Stir Fry

This is one of those great weight loss recipes that pile in so many fresh flavours from the lean meat, the various colourful vegetables (green, red, white and orange), and a very simple sauce.
There’s no need to use to packets of stir fry sauces (that are loaded with preservatives, sugar, salt and other additives).
We like the idea of keeping things simple, so we use just chilli, tamari, spring onions and fresh ginger as the base for the the sauce in this recipe.
While being similar to soy sauce in colour and flavour, tamari is different as it is uses less wheat and more soybeans in the production process.
As a general guide, many people use tamari in cooking while soy sauce is more of a table condiment (for instance, as a dipping sauce).

  • 400g lean beef strips
  • 1 -2 sprays of olive oil spray
  • 2 sliced spring onions
  • 1 tsp grated ginger
  • 1/2 cup capsicum strips
  • 1 cup broccoli florets
  • 1 cup shredded cabbage
  • 1 carrot cut into thin strips
  • 2 tsp tamari sauce
  • 1 red chilli, finely sliced
  • 1 cup cooked brown rice
  • Heat a large frying pan over medium/high heat.
  • Add the oil and then once it is hot add the spring onions, ginger and beef and cook until golden.
  • Stir in the vegetables and cook until tender.
  • Stir through chilli and tamari. Serve with rice.

Serves: 2. Calories per serve: 445.
