Today we are sharing a super delicious and indulgent recipe from the 28 Day Challenge which is perfect for the cooler winter mornings!
This is a delicious and decadent breakfast and a healthy way to start the day. Make enough to share with the whole family.
Banana & Choc-Nut French Toast
Ingredients (Makes 1 serve)
- 1 free range eggs (50 grams)
- 1 & 1/2 tablespoons reduced fat milk of choice (30 mls)
- 1/4 teaspoon cinnamon (0.25 grams)
- 2 slices wholegrain/gluten free etc bread of choice (80 grams)
- cooking oil spray
- 1 teaspoon peanut butter (4 grams)
- 1 square (1 tsp melted) dark chocolate (5 grams)
- 1/2 sliced banana (45 grams)
Method
- Whisk the egg, 1 tablespoon of milk (per serve) and cinnamon together in a shallow bowl. Dip the bread into the egg mix, turning to coat.
- Spray a non-stick fry pan with cooking oil spray over medium-high heat and cook bread slices for approximately 2 – 3 minutes on both sides until golden.
- While the French toast is cooking gently melt the chocolate in the microwave and combine with the peanut butter. Slowly mix in the remaining milk to create a smooth sauce.
- Top French toast with banana slices and drizzle over choc-nut sauce.
