Ash Petroff has lost more than 20kg with Lose Baby Weight and is always coming up with fabulous recipes to share with us.
Today she has sent us a recipe for Black Forest Cupcakes as part of our Scanpan Baking Competition.
Ingredients:
- Cupcakes:
- 1.5 cups wholemeal plain flour
- 1/4 cup cacao
- 1/4 cup coconut sugar
- 1 egg
- 1 cup unsweetened almond milk
- 1/4 natural yoghurt
- 1/4 cup dark choc chips (melted)
- Cherry sauce:
- 1 cup frozen cherries
- 1 tbsp pure maple syrup
- Dash of water
- 1 tbsp chia seeds
- Chocolate Frosting:
- 1 1/2 avocadoes, peeled and de-seeded
- 1/4 cup pure maple syrup
- 2 tbsp cacao
Method
- Preheat oven to 180C and line a muffin tray with cupcake cases.
- Mix all the cupcake ingredients (except melted choc chips) together, once all mixed then mix through the melted choc chips.
- Spoon the batter into the cupcake cases and bake for 10-15 min.
- Set aside to cool
- To make the frosting, mix all ingredients with a food processor or blender until well combined and place in the fridge to set.
- To make the cherry sauce, put cherries, maple syrup and water in a small saucepan and bring to the boil.
- Mash cherries with a fork and then add the chia seeds, let the sauce thicken. Once thickened, empty into a container and once cooled put in the fridge to set.
- Once cupcakes have cooled, add cherry sauce on top, and pipe on the frosting.
- Makes: 12.
- Calories per serve: 165.
