These healthy eating pancakes manage to pack in some healthy ricotta cheese, as well as wholemeal flour instead of the traditional white.
Which means you can still enjoy a traditional treat while you are losing pregnancy weight.

The raspberry sauce is essential for its oozy goodness on top of a stack of freshly made pancakes.
Instead of raspberries, why not try making this recipe with blueberries, strawberries, or even mango if you have some to hand.

Ingredients:

  • 1 cup low fat ricotta + 1/2 cup extra, to serve
  • ½ cup milk
  • 2 eggs, separated
  • 2/3 cup plain wholemeal flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • Olive oil spray to grease the pan
  • 200g punnet of fresh raspberries, halved
  • 1 tbsp honey

Method:

  • Make some raspberry sauce by combining half of the raspberries and the honey in a blender or food processor. Set aside.
  • In a large bowl, mix the ricotta with the milk and egg yolks.
  • Add the flour, cinnamon and the baking powder and blend gently.
  • Beat the egg whites in a clean bowl, until you have formed soft peaks.
  • Gently fold your egg white into the batter.
  • Heat a frypan over med/high heat and spray with olive oil to coat.
  • Pour the mixture into a jug with a spout to make it easier to pour into the pan.
  • Pour around 4 tbsp worth of mixture into the pan to make one pancake.
  • Cook until the edges firm up and it is golden underneath, then flip to cook the other side.
  • Serve with the fresh raspberries, the raspberry puree and a few dollops of the extra ricotta.
