Karen says: “I tried doubling the weetbix balls recipe but something went wrong and I couldn’t get the balls to form. I pressed the mix into a pan and topped with some dark choc melted with coconut oil. Let me introduce you to weetbix balls slice.”Screen Shot 2016-04-21 at 11.36.59 AM

Ingredients

  • 1 cup sultanas
  • 2 large tablespoon on natural crunchy peanut butter
  • 6tbsp desiccated coconut and extra for rolling
  • 1tbsp coconut oil
  • 4 weetbix
  • 4tbsp cocoa or cacao
  • 4tbsp honey or rice malt syrup
  • Little water if needed to make it more wet

Method

  • Put all ingredients in blender and blend until smooth like fudge.
  • Roll into extra coconut.
  • Line a loaf tin with baking paper.
  • Press the mix into a pan and top with some dark chocolate melted with coconut oil (optional)
  • Leave to set in the fridge

Makes approx. 12- 16 slices, at approx 170 calories each slice
