Well done Karen Kander! She has made the delicious Chocolate Weetbix Balls into a slice! It looks so amazing!!! A chocolate, guilt free snack!!
Karen says: “I tried doubling the weetbix balls recipe but something went wrong and I couldn’t get the balls to form. I pressed the mix into a pan and topped with some dark choc melted with coconut oil. Let me introduce you to weetbix balls slice.”
Ingredients
- 1 cup sultanas
- 2 large tablespoon on natural crunchy peanut butter
- 6tbsp desiccated coconut and extra for rolling
- 1tbsp coconut oil
- 4 weetbix
- 4tbsp cocoa or cacao
- 4tbsp honey or rice malt syrup
- Little water if needed to make it more wet
Method
- Put all ingredients in blender and blend until smooth like fudge.
- Roll into extra coconut.
- Line a loaf tin with baking paper.
- Press the mix into a pan and top with some dark chocolate melted with coconut oil (optional)
- Leave to set in the fridge
Makes approx. 12- 16 slices, at approx 170 calories each slice
