healthy_snickers_bitesTreats are often treated as a “no go” zone when you are following a healthy eating plan and with the majority of store brought treats that is often the case.
Katrina, mum of 2 has been following the Lose Baby Weight plans for the past 3 months and has lost 4.8kg and today she is sharing her healthy recipe based on the very well known Snickers Bar.
Katrina has been super creative with using only healthy ingredients in her recipe, meaning that these bites can be enjoyed in moderation and still keep you on track with achieving your weightloss goals.

Ingredients

Base

  • ¾ Cup Dark Chocolate
  • 2 Tablespoons 100% Natural Peanut Butter

Nougat

  • 2 scoops Vanilla Healthy Mummy smoothie mix
  • ½ Cup Light Cottage Cheese (whipped like you would do to cream)
  • 1 Egg White
  • 4 Tablespoons of LSA
  • 1 Tablespoon Vanilla Extract
  • ¾ Cup Almonds, roughly chopped (or slivered almonds)

Caramel layer (LBW 4 ingredient caramel sauce)

  • 4 Tablespoons Tahini
  • 2 Tablespoons Raw Honey (slightly softened, but not runny)
  • 1 teaspoon Vanilla Extract
  • 4 Tablespoons Light Coconut Milk

Topping

  • ½ Cup Dark Chocolate
  • 1 Tablespoon 100% Natural Peanut Butter

 Method

  • Line and grease a 9×13 pan ( or whatever you have on hand)
  • Melt chocolate and peanut butter together in microwave safe bowl (glass works best) in 30 second lots, stirring each time, until completely melted
  • Once completely melted spread over the bottom of the prepare pan and put in fridge to set
  • While the base is setting make nougat. Put all ingredients except almonds into a food processor or blender and process until well combined.  Put the combined mixture into a microwave safe bowl and heat for 45 seconds. Fold in the Almonds
  • Once base layer is completely set, spread the nougat mixture evenly over base and put back in fridge/freezer to re-set
  • To make caramel layer firstly combine the Tahini and honey in bowl. Next add the vanilla and coconut milk and stir to combine.  Microwave for 1-2 minutes until the mixture starts to thicken up. Let this mixture cool down before spreading over the set nougat layer. Put back in fridge/freezer to re-set
  •  Melt the last lot of chocolate and peanut butter together using same method as for base. Spread over rest of dish. Refrigerate until starting to firm and then score into 32 and return to freezer
  • Once fully set cut into 32 “bites”, keep stored in fridge or freezer in an airtight container
