Reader, Chelona, has created her own little Cheeky Cherry Bites, they have no added sugar and are delicious.
INGREDIENTS
- 1 cup frozen cherries
- 1 cup shredded coconut
- 2 Tbsp coconut oil
- 1 tsp vanilla extract
- 12 squares Lindt 70% dark chocolate
METHOD
- Place frozen cherries on a baking tray lined with baking paper and cook for 20 minutes in the oven at 160C.
- Place all ingredients apart from the chocolate and a little of the coconut oil (use to prepare moulds) into a food processor and combine.
- Using a mini muffin silicon mould tray, wipe 12 holes with coconut oil to prevent sticking, then evenly place cherry mixture into the moulds smoothing out the tops.
- Melt chocolate in microwave (20 second bursts until it is melted) and divide and spread over the cherry mix.
- Place in refrigerator to set for about 1 hr.
Makes 12 serves, 113 Calories per serve.
