Losing pregnancy weight isn’t easy for some women, and it’s for this reason that some choose to remove entire food groups from their diets in an effort to lose weight.
Carbs are sometimes wrongly considered the enemy, however carbohydrate-rich foods like pasta can be included in your healthy eating plan.
Where possible, opt for wholemeal pasta which has significantly more fibre than regular white pasta.
This delicious, simple dish has few ingredients but is packed with fibre, vitamins and minerals.
Ingredients:
- 200 grams wholemeal spaghetti
- I large tomato, chopped finely
- 2 handfuls of baby spinach
- 1 tablespoon of shredded basil leaves
- 1 tablespoon of olive oil
- 1 squeeze of lemon
- 100 grams of smoked salmon, sliced into fine pieces
Optional Extras:
- Toss through some canned chickpeas for extra protein
- Add fresh chopped chilli for some extra kick
- Top with some shaved parmesan cheese
- Garnish with crumbled reduced-fat feta if desired
Method:
- Add pasta to a large pot of boiling water and cook for 12-13 minutes or until cooked.
- Remove the pot from the heat, strain the pasta and return to the pot, with the olive oil, salmon, tomatoes, basil and baby spinach.
- Gently toss the pasta and other ingredients until well combined.
- Serve in on a plate with a squeeze of lemon on top.
