Reader Lea Faes has shared her healthy version of Upside Down Caramel Apple Muffins – your children won’t have a clue that there are two fruits and a vegetable in this delicious little morsel!

Ingredients 

  • 150g Pitted Dates
  • 2 Apples
  • 1/2 Zucchini
  • 50g Vegetable Oil
  • 110g Self Raising Flour
  • 1 Egg
  • 1 teaspoon Tahini
  • 1 teaspoon Vanilla Essence
       
    Method
     
    Preheat the oven to 180C.
    Place the dates in a bowl and cover with boiling water for 15 minutes.
    Grate one apple and the zucchini and add to a bowl with vegetable oil, flour, egg and vanilla essence. Mix until combined. Put to the side.
    Drain the dates – leaving about a tablespoon of the water behind. Blend into a paste. Put one tablespoon of the date paste into the bowl with the cake mix and combine.
    Add the teaspoon of tahini to the leftover date mix and blend to combined.
    Peel and thinly slice the other apple and place on the bottom of a greased muffin tray.
    Put a teaspoon of the tahini date paste on top of the Apple and then fill with the muffin mix.
    Bake for about 25mins until golden brown
