Sometimes it can be hard to get motivated to cook when your recipe has a very long ingredient list.
Worse still is when you get everything out only to realise that you’ve forgotten one vital ingredient.
So today we have three fail safe recipes that all require just three ingredients (excluding salt and pepper or some olive oil).
And the best part is you will most likely have the majority of the ingredients in the house already.
So get the frying pan heating up or the BBQ on – let’s cook some chicken!
Ginger and Soy Chicken
Ingredients:
- ¼ cup soy sauce (try to find one with reduced salt)
- Thumb size piece of ginger, peeled and chopped finely
- 4 chicken thighs (or 2 chicken breasts)
- + Olive oil spray
Method:
- To make the marinade, mix the soy sauce and ginger in a bowl.
- Use half of the marinade to coat the chicken and leave to rest for half an hour in the fridge.
- Discard the marinade that was used on the raw chicken.
- Heat a large frying pan over med/high heat and spray with olive oil.
- Grill the chicken, basting regularly with the other half of the marinade.
- Turn chicken over once browned and cook the other side.
Serves: 2. Calories per serve: 210
Lemon and Rosemary Chicken
Ingredients:
- 1 lemon, juiced and zested
- 2 tsp freshly chopped rosemary
- 4 chicken thighs (or 2 chicken breasts)
- + Salt and pepper, to taste
Method:
- To make the marinade, mix the lemon and rosemary in a bowl with some salt and pepper.
- Use half of the marinade to coat the chicken and leave to rest for half an hour in the fridge.
- Discard the marinade that was used on the raw chicken.
- Heat a large frying pan over med/high heat and spray with olive oil.
- Grill the chicken, basting regularly with the other half of the marinade.
- Turn chicken over once browned and cook the other side.
- Serve the chicken with any leftover marinade poured over the top.
Serves: 2. Calories per serve: 175.
Crispy Parmesan Chicken
Ingredients:
- 1 egg white
- 5 tbsp Parmesan, grated
- 4 chicken thighs (or 2 chicken breasts)
- + Olive oil spray
- + Salt and pepper
Method:
- Cut your chicken into strips or bite sized pieces.
- Whisk your egg white with some salt and pepper, then place in a bowl.
- Put the cheese into another bowl.
- Heat a frying pan to med/high heat and spray with olive oil.
- Dip the chicken into the egg white and then the cheese.
- Grill the chicken for around 10 minutes, turning once during this time, until crisp and golden.
Serves: 2. Calories per serve: 255.
