This is an example of the type of recipes that you’ll find on the challenge. It is a great family friendly meal that will be sure to become a favourite for everyone. Make this in a larger batch to serve everyone or to have as leftovers for lunch the next day.
Ingredients
(for 1 serve)
- 100 grams of chicken breast fillets
- 1 teaspoon honey (5 mls)
- 1 teaspoon soy sauce, salt reduced (5 mls)
- 45 grams of wide rice noodles
- 1 teaspoon extra virgin olive oil (5 mls)
- 1/4 brown onion (25 grams)
- 1/2 teaspoon fresh ginger (2 grams)
- 1/2 head bok choy (100 grams)
- 1 tablespoon cashew nuts, unsalted (10 grams)
Method
- Cut the chicken into 2cm pieces. Grate the ginger.
- Combine the honey, soy sauce and ginger. Mix through chicken and allow to marinate for a few minutes.
- Cook the rice noodles according to packet directions.
- Heat the oil in a wok or non-stick fry pan over medium-high heat and add diced onion to sauté for a minute.
- Roughly chop the Bok Choy and add the stems to the pan with the chicken and marinade. Stir fry for 5 minutes or until chicken is cooked through.
- Add the Bok Choy leaves just before the chicken is ready and cook for a further minute until wilted.
- Add the drained rice noodles and combine well. Serve with chopped cashews on top.
