While there’s nothing better than catching up with friends over a lazy Sunday lunch, fatty sausages and less than trim kebabs can mean that your weight loss plan is put to the test.
The problem with pre-made meats (like sausages and skewers) is that you often don’t know what type of meat they have put in them to start with, not to mention to marinade and other additives that are often poured over the top to add flavor.

Making your own skewers is a great option when trying to lose weight or follow a healthy diet as it allows you to control what goes into them (and what stays out!)
Using lean meat, like chicken breast, and avoiding salty marinades that are high in sugar and calories, means you can enjoy your lunch, while still watching your waist line.
Olive oil, garlic and a pinch of sea salt add plenty of flavor, with the acid in the lemon juice tenderizes the meat and gives it that extra tang.
Serve with BBQ’d corn on the cob and a green salad for a balanced, delicious meal.

 Ingredients
  • 700g chicken tenderloins, diced into chunks
  • 1 clove of garlic, crushed
  • Juice of 1 lemon
  • 1 tbsp finely grated lemon rind
  • 2 tbsp olive oil
  • Pinch of sea salt
  • Vegetable oil spray
  • 4 x cobs or corn, peeled of leaves and washed
  • 8 x pre-soaked bamboo skewers or metal skewers
Directions
  • Place chicken, lemon juice, lemon rind, 1 tbsp. olive oil, garlic and salt into a large bowl. Mix to combine, cover with cling film and place in the fridge for 30-45 minutes.
  • Pre-heat BBQ.
  • Place corn cobs on individual sheets of foil. Drizzle with remaining olive oil, wrap tightly and place on heated BBQ.
  • Remove from fridge and thread chunks of chicken onto pre-soaked skewers.
  • Spray BBQ or grill with vegetable oil and heat until hot.
  • Place skewers onto heated surface.
  • Cook for 5-10 minutes on one side before turning. Chicken should be golden brown and cooked through.
  • Remove from heat and serve with BBQ’d corn and your choice of salad.
Makes 4 servings – 254 cal per serve
