Today we have a super simple reader recipe for you all to try that you can include into your healthy eating plan guilt free while losing baby weight.
These balls are gluten free and would make a great lunchbox filler or after school snack.
Ingredients
- 100g Dates (18 dates)
- 80g Hazelnuts (1/2 cup)
- 150g fresh strawberries (1cup)
- 115g desiccated coconut (1 1/2 cups)
- 5ml strawberry or vanilla essence (Use strawberry essence if you want a more intense strawberry flavour)
- Zest of 1 lemon
- Pinch of salt
- 8 squares of dark chocolate (50g)
Method
- Soak the dates in boiling water for approx. 10 mins and then drain.
- Add all ingredients into a blender and blitz until combined.
- Take portions of the mix and roll into bite size balls.
- (Makes approx. 30 bite sized balls)
- Break up the chocolate blocks and place them in the microwave for 90 seconds or until fully melted.
- Dunk each ball into the choc to coat the top half and then place on a tray in the fridge to set.
-  Once set, I place them into a container and keep them in the freezer until wanted. These can be eaten straight from the freezer too 🙂
Makes 30 bite size balls. 62 calories per ball
