Summer is a great time to have fun with food but this doesn’t have to mean a negative impact on your weight loss of healthy food focus.  Infact the summer time means there is a wide variety of healthy eating and weight loss friendly foods for the whole family to eat.  Enjoy some of our favourite ones here that are all quick and easy for busy mums to make.

Avocado and spinach salad


  • 100g rocket leaves
  • 100g spinach leaves
  • 1 avocado
  • 10 cherry tomatoes
  • 1 cucumber
  • 3 garlic cloves
  • 1 lemon
  • Tbsp of olive oil
  • Sea salt and pepper

Cooking time: 15 min.
Wash the rocket and spinach leaves. Let them dry for a little while. Cut the cucumber in pieces and tomatoes in halves. Peel the avocado, then cut it in pieces. Put the cucumber, tomatoes and avocados in the salad bowl and add the dried leaves.
The salad dressing: Squeeze the juice out of the lemon and put it into a separate little bowl. Grind the garlic either with a knife or use blender. Add the olive oil, salt and pepper. Mix thoroughly. Make sure the salt has dissolved.
Pour the dressing over the salad and gently mix it in. Enjoy!

Gazpacho cold soup


  • 4 big tomatoes
  • 1 green pepper
  • 1 yellow pepper
  • 1 cucumber
  • 1 red onion
  • 1 teaspoon finely chopped chili pepper
  • 2 cloves of garlic
  • 4-6 tablespoons of olive oil
  • A handful of spring onions
  • 1 x celery stick
  • Sea salt
  • 2 hard-boiled eggs

Cooking time: 20 min. (1hour in the fridge)
Finely chop the peppers, cucumbers, celery, garlic and onion. Pour boiling water over the tomatoes to make them easier to peel. Keep the tomato juice you get while cooking. Put all the prepared ingredients in the blender and add the olive oil. Blend it until it looks like a puree. If the soup seems a bit too thick, add the tomato juice. Add salt and chilli pepper. Pour the soup in a bowl, cover it and put it in the fridge for an hour. Add some chopped eggs and chopped spring onions to the soup before serving. Enjoy!

Salmon Kebabs


  • 500g salmon fillet
  • 3 tablespoons lime or lemon juice
  • 3 tablespoons olive oil
  • Black pepper
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons chopped dill
  • 1 large garlic clove

Cooking time: 25min. (20minutes in the marinade)

Finely chop the garlic. Cut the salmon in  3.5×3.5 cm big pieces. Put all the ingredients in a large bowl. Leave the fish to marinade for about 20 minutes. Skewer the fish pieces onto skewers and fry them in  high heat on open flame. Cooking might take around 25minutes, depending on the heat of your grill. Tastes great with various salad. Enjoy!

Low fat strawberry and blueberry cake


  •  2eggs
  • 1cup low fat yoghurt
  • 1/2 cup brown sugar
  • 1 tablespoon baking soda
  • 1 cup whole wheat flour
  • l  1 cup wheat flour
  • 1 cup strawberry halves
  • 1 / 2 cup blueberries
  • 1 teaspoon vanilla extract
  • 2 teaspoons Amaretto
  • 1/2 cup olive oil

Cooking time: 15min. (35-40 minutes in the oven)
Mix the eggs, yoghurt, sugar, vanilla extract and Amaretto in one bowl. In the other bowl mix flour and baking soda. Then mix everything together. Mix the berries in the pastry. Pour the pastry in a casserole dish and bake for 35-40minutes. Serve cooled. Enjoy!
