These generously-sized sugar-free cookies will melt in your mouth, but are only 144 calories each! These are our new favourite cookie recipe, especially since they won’t put our healthy eating plan into jeopardy.
You just might need to make double quantity. Either that or hide them from the kids!
Sugar Free Peanut Butter Cookies
Ingredients
- 1 cup wholemeal plain flour, sifted
- 1/2 cup natural peanut butter (look for one that has 100% peanuts on the label)
- 1/4 cup raw honey
- 1 egg
- 1.5 tsp baking powder
- 1 tsp natural vanilla extract
- pinch of salt
- Chocolate chips for decoration
Directions
- Preheat the oven to 180c
- Place all ingredients into a food processor or blender
- Process on ‘low’ till combined
- Scoop out tablespoon sized dollops of batter and roll into balls
- Place balls onto a baking paper lined baking tray and flatten with the back of a spoon
- Top with chocolate chips
- Place in the oven for 10-15 minutes or until starting to turn golden
Recipes makes 12 cookies, 144 calories per cookie
