There is something special about real fruit strawberry ice cream. And this recipe is particularly special as it is easy to make at home and totally guilt free with no no numbers, no artificial additives, no gums, no emulsifiers, no preservatives and minimal processing – unlike most store bought brands.
Make it with the kids today and have fun experimenting with different textures and alternative fruits for new flavour combinations!

Ingredients

  • 1 can of light coconut cream
  • 1 banana
  • 2 cups of strawberries hulled (or you could frozen strawberries)
  • 2 large tbs of Greek yoghurt
  • 2 tbs of honey (or alternative sugar replacement)

Directions

  1. Blend all the ingredients together and then freeze off in little ice cubes. By putting them in ice cubes it is less difficult to break down post freeze.
  2. After a minimum of 1-2 hours, place the ice cubes back into the blend and blend until at desired consistency.
  3. Serve in a bowl sprinkled with fresh strawberries and a sprig of mint
