For a new healthy eating breakfast idea this simple way to serve up fruit, oats and yoghurt is hard to beat.
Soaking the oats in the fresh juice softens them up and means you don’t need to spend time cooking them.
It also means you can enjoy oats chilled which is perfect for warmer weather.
When you start your day with good carbs, healthy eating fresh fruit and protein it is going to fill your tummy until morning tea and give you plenty of energy to get through the morning.
Ingredients:
- ½ cup of oats
- Juice of 2 oranges
- 1 large crunchy red apple, grated, with peel on
- 1 tsp cinnamon
- 1 tbsp LSA
- 1 cup low fat Greek yoghurt
- 10 strawberries, chopped
- Mint leaves, to serve
Method:
- Soak the oats in the orange juice, apple, LSA and cinnamon for 20 minutes (or leave overnight).
- Mix well to combine.
- In two small glasses, add the yoghurt and half of the chopped strawberries.
- Top with the muesli mix, extra strawberries, and mint leaves.
Serves: 2. Calories per serve: 390.
