Chicken is a favourite food of many people, and as it is packed with protein it’s also an ideal food for weight loss and it is great to include on the Lose Baby Weight plans.
Protein can speed up your pregnancy weight loss as your body has to work twice as hard to digest it – meaning that you actually burn off twice as many calories processing protein than you do processing fat or carbohydrates.
However, you should always eat a varied diet, including fruit, veggies, complex carbs, lots of lean protein and low fat calcium.
Chicken is also low in calories and fat at around 140 calories and less than 3g of fat in one chicken breast, making it a great food to include in any your weight loss plan. Because chicken is filled with protein, it will not only help you to burn more calories, it will help to fill you up.
Filling up on low calorie, high protein foods is a great way to prevent food cravings – helping you to shed the kilos. To give you a little inspiration for using this yummy ingredient, we’ve come up with a super simple recipe for sticky lemon chicken, perfect for kids and adults alike.
Sticky Lemon Chicken with Sweet Potato Wedges
Ingredients
- 4 x chicken breasts, skinless, trimmed of fat and sinew
- 1 large lemon
- 2 tbsp. runny honey
- Salt and pepper
- 2 tbsp. water
- 4 sweet potatoes
- ½ tsp. dried thyme leaves
- ½ tsp. sweet paprika
- Salt and pepper
- Cooking spray
Directions
- Wash the potatoes and chop into wedges. Toss with cooking spray, paprika, salt and pepper and lay in a single layer on a baking tray lined with greaseproof paper. Put into a 200C oven and cook for 30-40 minutes until tender and golden, turning halfway through cooking.
- Meanwhile, slice the lemon in half. Slice four thin slices off of one of the halves. Season the chicken breasts well on both sides, place into an oven dish and bake for 5-7 minutes. Turn the chicken breasts over and lay a thin slice of lemon onto each chicken breast. Season with salt and pepper and drizzle over the honey, then pour the water into the oven dish. Squeeze the remaining lemon half, through your hands to prevent seeds from dropping out, all over the chicken breasts. Scatter the thyme leaves on top.
- Bake the chicken for another 10-15 minutes until cooked through. The honey and lemon on top should have turned golden brown in colour. If the chicken is still a little pink in the middle, return to the oven for a couple of minutes.
Recipe serves 4. Calories per serving: 315. If you like, bulk the meal out a bit by serving it with a spinach and red onion salad.
