Running short of time for a healthy eating dinner for the family? Look no further than a veggie packed frittata to save the day!
It’s a great idea to always keep eggs in the house, as it means you always have the base for a healthy eating meal.
Feel free to substitute for whatever vegetables or cheese that you have on hand.
Serve with a big green salad and you’ve got dinner sorted.
Ingredients:
- 1 red onion, peeled and finely diced
- 2 cups baby spinach
- 1 cup small broccoli florets
- 1 tbsp olive oil
- 6 large eggs
- ¼ cup Parmesan cheese, grated
- Salt and pepper to taste
Method:
- Preheat your oven to 220C.
- In an ovenproof frying pan, heat the oil over med/high heat.
- Cook the onion for 2 minutes, then add the broccoli and cook for a further 5 minutes.
- Add the baby spinach and stir fry for 1 minute.
- In a separate bowl, whisk the eggs together and season to taste.
- Pour the egg mix into the frying pan and tilt the pan to ensure even coverage.
- Sprinkle with the Parmesan and then cook in the oven for 20 minutes or until golden brown.
Serves: 4. Calories per serve: 190.
