And although it is more of a Virgin Mary really, this soup has all the delicious trappings of an old fashioned Bloody Mary (minus the vodka!).
Serve this as a meal in itself with some tasty wholegrain rolls (we love soy and linseed rolls at our house).
Tomatoes are great for weight loss as they contain fibre. Fibre will keep you fuller for longer, meaning you are less likely to overeat.
To maximise their flavour, store tomatoes at room temperature rather than in the fridge.

  • 3 large tomatoes
  • 500ml tomato juice
  • 1 tbsp Worcestershire sauce
  • 1 tbsp balsamic vinegar
  • Juice of 1 lime
  • 3 drops of Tabasco sauce (to taste)
  • Salt and pepper
  • 2 tbsp Greek yoghurt, to serve
  • Basil or celery leaves, to serve
  • Place your tomatoes in a bowl and cover with boiling water
  • Allow to sit for 30 seconds before removing the water
  • Remove the skins and then finely chop the tomatoes
  • healthy_eatingPlace into a large saucepan over med/high heat. Simmer the tomatoes for 4 minutes.
  • Pour in the tomato juice, Worcestershire sauce, vinegar, lime and Tabasco.
  • Season well with salt and pepper.
  • Use a stick blender to blend the soup until it is smooth.
  • Bring the soup back up to a simmer before serving into bowls.
  • Garnish with yoghurt and the leaves.
