We hope you are enjoying browsing the Challenge Hub! Still a few weeks until September 1 but lots of recipes, exercises and ideas in the hub to keep you on track. And speaking of recipes – here is a really tasty one to make this week – you will love it.
Whole-wheat couscous is high in fibre and protein, both essential for our bodies to function well and also to keep our blood sugars stable so we can stay satisfied for longer. Important factors to consider when following a healthy eating diet plan.
It’s very easy to cook by simply adding boiling water and leaving to sit until fluffy. It also has a very mild flavour, which makes it an easy addition to any dish.
Mushrooms are another key component in this recipe. They are known to boost heart health and provide a boost to our immune system through high levels of antioxidants. They add amazing flavour to savoury dishes and are a perfect compliment to chicken.
A delicious meal to prepare for the family when trying to lose pregnancy weight.
Ingredients:
- 4 x 120g chicken breast fillets
- 2 tbsp. rice bran oil
- 1 ½ teaspoons fresh grated ginger
- 2 cloves garlic, crushed
- 2 tsp fresh chopped thyme
- 2 tsp ground cumin
- 4 shakes black pepper
- 1 cup whole wheat couscous
- 1½ tsp mild paprika
- 1 cup boiling water
- 3 cups chopped mushrooms
- 2 cups chopped baby spinach
Method:
- Combine oil, ginger, garlic, thyme, cumin and pepper in a small bowl. Brush onto chicken and refrigerate for at least 20 minutes to marinate.
- In a large fry pan, start to cook chicken and put kettle on.
- When chicken is mostly cooked, add mushrooms to the same pan and sauté until both the chicken and mushrooms are well cooked.
- Meanwhile, stir paprika into the boiling water then pour over the couscous in a bowl. Cover and set aside to cook, stirring with a fork to make fluffy.
- When chicken is cooked, remove from the pan and let sit under foil. Add spinach to mushrooms and increase heat. Stir until spinach has softened.
- Turn off heat and stir couscous into mushroom and spinach. Spoon onto plates and serve with chicken on top.
- Serve chicken on top of couscous.
