Slow cooked, delicious and full of hidden veggies. If you’re looking for a healthy dinner to feed the kids this winter then THIS IS IT. These healthy porcupine meat balls can be enjoyed on their own, with mash, pasta or even bread to soak up the delicious sauce.

Ingredients:
- 500g lean mince, We used beef but you can choose to use any.
- 1 small brown onion, half chopped finely, half sliced
- Condensed tomato Soup
- 1 grated zucchini
- 1 grated carrot
- Minced garlic, as little or as much as you’d like.
- 1 Egg
- 1tsp Coconut Sugar
- 1tbsp Worcestershire Sauce
- 125g Cooked Brown Rice (You can use pre cooked packets of brown rice)
- Water
- 2tsp of Oregano
Method:
- Firstly you need to make the meatballs so mix the mince, the finely chopped onion, 1tsp of oregano, egg, minced garli, grated carrot and zucchini and brown rice well together. Roll into big meatballs this mix will make 10.
- Put the meatballs into the slow cooker.
- Mix together in a big jug the tomato soup, Worcestershire sauce, the other tsp of oregano, coconut sugar. Fill the empty tomato soup can with water and add to the sauce mix. Once well mixed pour over the meatballs
- Set slow cooker on high temp and cook for 5hrs.
- You can chose to add uncooked brown rice to the slow cooker but use the low temp and cook for 7-8hrs.
- Can serve by itself, or what ever you choose, my kids love it by itself with some buttered bread to soak up the sauce.
