Today we have Shelley Robb’s Frozen Coconut Honey Bites Recipe for you all to try! These look INCREDIBLE and can be enjoyed GUILT FREE while you are following a healthy eating plan.

Ingredients
- 2 heaped tablespoons of coconut oil
- 270ml full fat coconut cream – (ensure you store this in the fridge for at least 24 hours before making this recipe)
- 2 tablespoons of honey or rice malt syrup
- 1/2 teaspoon natural concentrated vanilla extract
Method
- Melt coconut oil and set aside
- Place chilled coconut cream, honey (or rice malt syrup) and vanilla into a medium bowl and mix with electric beaters until smooth
- Once smooth, drizzle in coconut oil while still beating
- Continue to beat until ingredients are combined and mixture is smooth
- Spoon mixture into silicon moulds/tray (you could even use patty pans)
- Pop into the freezer to set (keep stored in freezer)
- EAT – YUM!!
